Step 4: Shred the chicken Remove chicken from pot. Shred with two forks into bite-sized pieces. Return to pot.

Step 5: Cook the noodles (8-10 minutes) Bring soup back to a boil. Add egg noodles. Cook 1 minute less than package directions -- they continue cooking in the hot broth.

Step 6: Finish and serve Remove bay leaves. Stir in fresh parsley. Squeeze in half a lemon for brightness if desired. Adjust salt and serve.


What Makes It Taste Good

Use chicken thighs, not breasts. More fat and collagen means juicier meat and a richer broth. Breasts go rubbery after simmering.

The sear matters. Brown bits (fond) on the pan bottom deglaze into your broth -- you cannot replicate this flavor any other way.

Saut the vegetables first. Raw aromatics dropped straight into broth taste flat. Five minutes of softening unlocks their flavor.

Add fresh herbs last. Dried thyme can go in early. Fresh parsley added at the end stays bright, not grassy.
